I'm starting to code a simple specific iOS application to display a nomograph of hybrid systems.
Where can I find the UUID of the BLE services offered by MC+ and its characteristics along with function of these ?

If MC+ is a commercial product, contact the vendor or technical support.

They may provide you with a detailed list of BLE services and characteristics and their roles (e.g., sensor data, configuration, control).
